    President's Letter

    Hello everyone,

    It is hard to believe April is already ending! We are thrilled by the enthusiastic response from so many chefs and schools eager to participate in our education committees. Thank you for your engagement!

    Last weekend, our Vice President, Chef Jake Williams, CEC, AAC led an insightful informal discussion on the benefits of certification, both professionally and personally. He covered the evaluation process and shared valuable best practices for timing and preparation. We are pleased to announce that a recording of this session will be available on our website soon, so keep an eye out!

    Mark your calendars for our next chapter meeting on Monday, May 12th, at Charlie Baggs Culinary Innovations, located at 1071 W Division St, Chicago, IL 60642 (www.charliebaggsinc.com ). The meeting will kick off at 5:30 PM. You'll find both free parking in their parking lot and ample street parking nearby.

    We're delighted to welcome Sophie Mellet-Grinnell from Jurgielewicz Duck (www.tastyduck.com ) as our guest speaker. Sophie will delve into their farm operations, product line, and, of course, everything you need to know about their exceptional duck. While Sophie shares her expertise, Chef Wook, CEC, and Chef Surendra, and I will be preparing signature duck recipes we've created especially for this meeting. We will also have a selection of wine, beer, and soft drinks available for everyone to enjoy.

    Your input is invaluable! Please do not hesitate to reach out and share your event ideas you have. We are also looking for members who might be interested in hosting or actively participating in future events.

    • June 23rd: Tamale Demonstration with Chef Ozzie from LEYE (Location to be determined)
    • July 14th: Chapter Meeting at Meats by Linz, focusing on fall cuts.

    • October: Our Centennial Celebration! Stay tuned for details.
    • November: To be determined.
    • December: Certifications at Northwestern University, followed by our Annual Holiday Party.
