President's Letter

Happy September Chicago Chefs,
Let me start out by saying thank you to Erin Connole and the ITW team for a great meeting last month. We had a great combined meeting and turnout with the Northwest Indiana chapter. (Even with the floods and tornadic activity) We saw the modular kitchen systems and Vulcans new combi oven in action.
It's Oktoberfest season at the end of the month. I loved going to Hans Bavarian Lodge in Wheeling for dinner with my family and of course Oktoberfest with my friends! The food, the steins, the music, and the dancing were wonderful. It’s a great step into our fall season here in Chicago. I want to ask if anyone would be interested in putting together an Oktoberfest event in 2026. Please reach out if you are interested in starting a committee. Since I am speaking about the autumn season, I’d like to tell you what we have planned for the chapter through the end of the year and into 2026.
Monday, October 13th 5:30pm-8pm we have a meeting at IDM Content Kitchen, 493 W. Fullerton, Elmhurst, Il. The meeting will involve Jurgielewicz duck, Meatico dry aging cabinets, and finish in a Rational combi oven.
Monday, November 10th A joint meeting with the ACF Chefs of NW Indiana chapter at Testa Produce. 4555 S Racine Ave, Chicago, Il 60609.
December 9th, Holiday Party, LaVilla in Chicago
Saturday, December 13th Northwestern University, Evaluator training
Sunday, December 14th Northwestern University, Certifications
Tamale Tuesday, January 6th Miele Experience Center Chicago, 222 W Merchandise Mart Plaza Suite 133, Chicago Il, 60654 Chef Ozzie Ocegueda will be showing tamale making.
Monday, February 9th, Charlie Baggs Culinary Innovation- content TBD
Chef Jake, CEC, AAC, the Board and I have been working diligently to build programs that you will find valuable. We are committed to building the chapter and bringing you meaningful meetings, events, competitions, committees, and certifications. We are expanding our Board of Directors and have put together the positions we are looking to fill. We feel it is important to get more people involved and ready them to lead the chapter in the future.
