President's Letter

Hello Chefs and members of the ACF Chicago Chefs,

I would like to start off by saying thank you to Chef Surendra Rawat for our great lunch at India Palace in Wheaton. The food had wonderful flavors and was very well put together. It was great to see everyone that came out. 

Our next meeting is going to be hosted by Kendall College. Saturday, March 29th. From 10am-12pm. We will have a Cheese and Charcuterie class taught by Andy Ellenbaum from Sysco foods and European Imports. The class will focus on local products, various styles and beverage pairings.

We have been working hard putting together events for the year. JJS Duck on May 12th, Chef Charlie Baggs, has offered to host the event. We will be looking for four Chefs and two students that would like to prepare and present dishes. The chefs will receive duck samples, write recipes to share with the brand, who will then share with their social media. This should be a fun event. Let us know if you are interested in participating as one of the Chef presenters.

Chef Jake Williams CEC AAC, our Vice President, is working on Education committees. If you would like to be involved reach out and let us know. We will get you in contact with him. As I have said in the past, we want to work together to make a stronger and more collaborative ACF chapter here in Chicago. If there is something that you are passionate about or something you would like to do let us know. We will work on helping you form a committee and getting you the resources that you need to be successful.

Recent storm events have reminded me of an idea that I have had for some time. Entering storm season, I would like to know if anyone knows how we can help with local emergency response teams. I think it would be great to have a team of ACF Chefs, and our vendor partners put together an action plan to assist in case of an emergency. This can be something as simple as cooking and helping with logistics for food and water. I will also reach out to the other chapters in Milwaukee, Indiana and Michigan to see if they would be interested in creating a joint response team. I am a firm believer in giving back and helping people when they are in need. Please reach out if you have any ideas.
